This Imperial Gose is a bold collaboration that pushes the boundaries of the traditional style. It presents a complex interplay between the characteristic lactic tartness and a deep, floral richness from added honey. The aroma is dominated by the unique Pimienta Austral, providing an exotic, woody spice and red berry note that replaces the traditional coriander. Despite its high 8.8% ABV, it maintains a deceptive drinkability, balancing a moderate saline mineral edge with a doughy malt backbone. The finish is remarkably crisp yet warming, leaving a lingering tingle of spice and a mouthwatering acidity that underscores its multifacety sensory profile.
Appearance. Deep yellow to light gold (4-6 SRM) with a moderate to full haze. It supports a tall, dense white head with excellent retention and fine-beaded lacing.
Aroma. High intensity. Bright lactic acidity mingles with the distinctively spicy and woody fragrance of Pimienta Austral, offering hints of cracked black pepper and dried berries. A subtle, floral honey sweetness provides a counterpoint to the sharp, lemony tartness, while the malt presents a light, bready wheat character. No hop aroma is present.
Taste. A forceful initial tartness of lemon and green apple is immediately followed by a wave of floral honey and bready malt. The Pimienta Austral provides a mid-palate peppery heat and herbal complexity. A noticeable but restrained salt character enhances the mouthwatering quality. Bitterness is very low, as the crisp acidity and spice provide the primary balance. The finish is dry and clean with a lingering peppery warmth.
Mouthfeel. Medium-full body, significantly weightier than a standard Gose, with a smooth, slightly viscous texture from the honey and higher gravity. Carbonation is high and effervescent. A gentle, well-integrated alcohol warmth is present, complemented by a tingly, saline-induced mouthfeel.
