This sophisticated Saison bridges rustic farmhouse traditions with modern complexity. Matured in Chardonnay barrels, it carries an elegant vinous character of white grape and soft oak intertwined with the wild funk of Brettanomyces, reminiscent of damp hay and leather. The dry hopping of Wakatu hops adds a vibrant layer of lime zest and floral notes that sharpen the sensory profile. Expect a lean, effervescent body with high attenuation, elevated by the 7.5% strength. It is a refreshing, psychedelic blend of barrel-aged depth and bright, hoppy aromatics, finishing bone-dry with a lingering peppery spice and rustic grain character.
Appearance. Deep gold to pale orange (SRM 7-9). Large, dense, rocky white head with excellent persistence and heavy Belgian lacing. Slight haze from the dry hopping and Brettanomyces activity; highly effervescent.
Aroma. High aromatic intensity. A complex blend of lime zest and floral Wakatu hops mixes with distinct Brettanomyces funk—earthy hay and mild barnyard. Sophisticated vinous notes from the Chardonnay barrel provide a white grape and light vanillin oak background. Malt is low and grainy, with moderate peppery esters.
Taste. Initial dry impression leads to a multifaceted palate of citrus and tropical fruit from the Wakatu hops. Mid-palate features tart green fruit and subtle oak from the Chardonnay barrels. Grainy, rustic malt is present but secondary to the yeast-driven spice and funky Brett complexity. Bitterness is moderate but feels firm due to the very high attenuation. Finish is bone-dry, clean, and lingering with a spicy aftertaste.
Mouthfeel. Medium-light body with very high carbonation and an effervescent, prickly sensation. Noticeable but well-integrated alcohol warmth from the 7.5% ABV. Bone-dry finish with zero cloying sweetness; very low astringency.
