Gram Daimon
This British Brown Ale presents a complex tapestry of malt character, heightened by the unique addition of carob. Brewed with four varieties of malted barley and soft water from the Sierra de Mariola, it offers a rich foundation of toffee and toasted nuts. The carob integrates seamlessly, providing a distinctive earthy sweetness reminiscent of dark cocoa and leathery dried fruit. While the brewer describes it as porter-like, the sensory profile remains firmly rooted in the brown ale tradition, balancing gentle hop bitterness with a smooth, lingering finish. The result is a medium-bodied, artisanal ale with a clean fermentation profile and sophisticated depth.
Appearance. Dark reddish-brown to deep mahogany (approximately 20 SRM). Exhibits good clarity with a moderate, persistent light tan head that leaves fine lacing on the glass.
Aroma. Moderate intensity featuring a sweet malt core of caramel, toffee, and toasted hazelnuts. The carob adds a layer of earthy chocolate and subtle dark fruit. Very low floral hop notes and a clean fermentation profile with minimal esters.
Taste. Initial impression is malt-driven with flavors of biscuit, toffee, and roasted nuts. The carob provides a unique woody sweetness and a hint of cocoa without roasted acridity. Bitterness is medium-low, providing just enough balance against the malt. The finish is medium-dry and clean.
Mouthfeel. Medium body with a slightly creamy consistency attributed to the carob. Moderate carbonation provides a gentle prickle on the tongue. Alcohol warmth is light and well-integrated at 5.5% ABV.
