This massive Imperial Stout, a collaboration with Far Yeast Brewing Company, delivers an indulgent sensory experience inspired by cookie dough. The profile is dominated by a rich, decadent malt base featuring layers of dark chocolate, cocoa, and molasses. These primary notes are seamlessly integrated with secondary pastry-inspired aromas of vanilla, brown sugar, and a buttery sweetness. The presence of dark fruit esters—reminiscent of raisins and figs—adds complexity beneath the intense roast. Despite the high 10% ABV and significant bitterness, the finish remains velvety and sweet, perfectly capturing the essence of a dessert-forward pastry stout while maintaining its structural power.
Appearance. Jet black and completely opaque (40+ SRM). It pours with a thick, creamy, deep tan head that shows moderate retention and leaves significant lacing on the glass. High viscosity is apparent in the form of visible legs when swirled.
Aroma. High intensity with a complex blend of bittersweet chocolate, espresso, and toasted bread. Strong pastry-like notes of vanilla bean and caramelized sugar mimic raw cookie dough. Subtle dark fruit esters like prunes and black currants are present, while earthy hop character remains very low. A clean, smooth alcohol presence is noticeable.
Taste. An initial impression of intense chocolate and sweet malt richness. Middle palate reveals flavors of vanilla, brown sugar, and dark-roasted grains. Hop bitterness is moderate-to-high but is heavily countered by the residual sugars of the cookie dough profile. The finish is long and warming with lingering notes of cocoa and a slightly vinous quality. It is rich and sweet but avoids becoming cloying due to the roasted malt depth.
Mouthfeel. Full to very full-bodied with a thick, chewy, and luscious texture. Carbonation is low to moderate, enhancing the creamy mouthfeel. A smooth, gentle alcohol warmth is prominent and well-integrated, providing a pleasant glow without being harsh.
