This Selvatico Gose presents a vibrant, refreshing profile, merging the traditional Gose framework with the elegant, vinous influence of Verdicchio must. Aromas of bright lemon and citrusy coriander are deepened by a subtle, white grape character and a sourdough-like wheat backbone. On the palate, a crisp lactic tartness leads into flavors of pome fruit and a light mineral salinity that enhances the mouthfeel without becoming overtly salty. The Verdicchio integration adds a sophisticated floral and dry wine-like finish, perfectly complementing the high carbonation and effervescence for a remarkably clean, thirst-quenching experience.
Appearance. SRM 3-4. Unfiltered and hazy, straw-yellow color with a tall, white head of tight bubbles showing good retention and effervescence.
Aroma. Moderate intensity with a clean lactic sourness. Distinct aromas of lemon-citrus coriander and vinous white grape from the Verdicchio must. Low bready, doughy wheat malt; no hop aroma.
Taste. Initial tartness followed by moderate bready malt. Light stone fruit and white wine flavors transition into a noticeable but restrained mineral salt character. Very low bitterness; acidity balances the finish. Dry, crisp, and refreshing aftertaste.
Mouthfeel. Medium-light body with very high carbonation providing a prickly, effervescent sensation. The salt provides a slight tingle and mouthwatering quality. Negligible alcohol warmth.
