This West Coast style American IPA showcases a vibrant interplay between Simcoe and Nelson hops, delivering an assertive aromatic punch. The nose is greeted with intense notes of white wine grapes and crushed gooseberries from the Nelson, layered over Simcoe’s resinous pine and bright grapefruit zest. Poured a brilliant pale gold, the beer maintains a lean, crackery malt profile that provides a clean foundation without competing for attention. A sharp, crisp bitterness defines the palate, leading into a dry, refreshing finish that lingers with a touch of passion fruit and woodsy evergreen, embodying the classic California profile.
Appearance. Pale gold (6 SRM); brilliant clarity; medium-sized, persistent white head with fine-textured lacing.
Aroma. High intensity; dominant hop notes of white wine grapes, lychee, and gooseberry alongside pine resin and grapefruit; very low, clean bready malt; neutral fermentation profile.
Taste. Assertive hop-forward initial impression; flavors of passion fruit, pine, and white grape; medium-high bitterness (~60 IBU) that is clean and firm; minimal grainy-sweet malt; bone-dry finish with a lingering resinous and citrusy aftertaste.
Mouthfeel. Medium-light body; medium-high carbonation; very smooth with no astringency; minimal, clean alcohol warmth.
