This American IPA presents a vibrant sensory profile driven by the concentrated resinous punch of Simcoe Cryo and the distinctive vinous character of Nelson hops. Initial aromatics burst with notes of passionfruit, crushed gooseberry, and a persistent forest pine, supported by a clean, lean malt backbone. On the palate, the bitterness is firm and snappy, typical of the West Coast style, delivering flavors of grapefruit zest and white wine. It finishes remarkably dry and crisp, leaving a lingering trail of citrus peel and resin that invites another sip, embodying a modern, hop-forward precision.
Appearance. Medium gold (approx. 6-8 SRM) with brilliant clarity. Pours with a medium-sized, persistent white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring prominent notes of pine resin and citrus from the Simcoe Cryo, alongside the characteristic white grape, gooseberry, and tropical fruit esters of Nelson. Low, clean, grainy malt sweetness provides a neutral foundation.
Taste. Leading with a medium-high to high hop bitterness, the flavor profile is dominated by grapefruit, passionfruit, and a sharp, resinous woodiness. The malt character is low and crackery, lacking any significant caramel. The finish is very dry and clean with a lingering, hoppy aftertaste that showcases Nelson’s unique white wine qualities.
Mouthfeel. Medium-light body with a smooth, crisp texture. Moderate to high carbonation enhances the dry finish. No significant alcohol warmth or astringency present.
