This award-winning Alternative Grain Beer artfully captures the essence of a classic British Brown Ale through an innovative gluten-free lens. The sensory profile is defined by the use of dual-roasted chestnuts, which impart a deeply aromatic fragrance of toasted nuts and rich caramel. Subtle notes of coffee emerge from the specialized roasting process, adding layers of complexity to the malt-forward base. Despite the absence of traditional barley, the chestnuts provide an unctuous quality and a satisfying depth of flavor. Balanced and approachable, it offers a clean, nutty finish that bridges the gap between traditional dark ales and modern alternative fermentables.
Appearance. Deep copper to reddish-brown in color (SRM 15-18). Displays a cream-colored, off-white head with moderate retention and light lacing. Clarity is generally clear, though a very slight haze may be present due to the alternative grain proteins.
Aroma. Moderate intensity with a dominant character of roasted chestnuts and toasted nuts. Secondary notes of sweet caramel, light toffee, and a faint hint of cold-brew coffee. Hop aroma is very low to absent, and yeast esters are clean and neutral.
Taste. The initial impression is malty and nutty, leading into flavors of toasted chestnuts, caramel, and a subtle biscuit-like quality. Low earthy hop flavor provides a light counterpoint. Bitterness is mild, serving only to balance the malt sweetness without lingering. The finish is clean and medium-dry with a lingering aftertaste of roasted nuts and light coffee.
Mouthfeel. Medium body with a surprisingly smooth, unctuous texture. Carbonation is moderate, providing a crisp lift to the palate. There is no perceived alcohol warmth or astringency, resulting in a smooth and highly drinkable mouthfeel.
