This Pastry Sour Ale presents an indulgent sensory experience, merging the bright acidity of a Wild Specialty Beer with the lush, dessert-like qualities of its orange and strawberry additions. The aroma is dominated by fresh-squeezed orange zest and sun-ripened strawberry puree, supported by a gentle, doughy malt backbone. On the palate, the tartness of the oranges cuts through a creamy, lactose-enhanced body, while the strawberries provide a jammy sweetness that lingers into the finish. Developed in collaboration with Nepomucen, this ale balances lactic tang with a smooth, pastry-inspired mouthfeel, resulting in a vibrant yet comforting fruit-forward profile.

Appearance. Hazy, deep orange with vibrant pink highlights; thick, creamy off-white head with pinkish tints and moderate retention.

Aroma. High intensity fruit; dominant fresh orange zest and jammy strawberry. Moderate lactic tartness. Subtle notes of vanilla and sweet, doughy malt.

Taste. Initial burst of tart orange and sweet strawberry. Malt provides a cracker-like base with noticeable creamy sweetness. Clean lactic acidity balances the pastry richness. Negligible hop bitterness. Finish is juicy and off-dry with lingering berry notes.
