Geneviève de Brabant Blanche presents a regal interpretation of the classic Belgian Witbier, defined by its luminous turbidity and a dense, moussy head. The sensory profile is led by the rustic, bready character of unmalted wheat, which provides a smooth, creamy foundation for traditional spice additions. Vibrant aromatics of zesty orange peel and freshly ground coriander offer a bright, citrus-forward bouquet with a subtle peppery undertone. On the palate, a delicate balance of fruity esters and botanical spice is underscored by a refreshing, low acidity and a crisp, dry finish. High carbonation elevates the intricate layers of honeyed malt and citrus, resulting in a noble and highly sessionable effervescence.
Appearance. 2–4 SRM. Very pale straw to light yellow with a milky, whitish-yellow shine. Very cloudy and turbid from starch haze. Dense, white, moussy head with excellent retention and light lacing.
Aroma. Moderate intensity featuring bready, grainy wheat malt with light notes of honey. Prominent zesty orange citrus and perfumy-lemony coriander aromatics. Low herbal and spicy background notes from the yeast; hop aroma is typically absent.
Taste. Initial impression is refreshingly crisp with pleasant bready, grainy wheat malt flavors and a hint of vanilla sweetness. Moderate citrusy orange fruitiness and subtle, balanced herbal-spicy flavors from coriander. Hop bitterness is low, providing just enough structure to support the fruit and spice. Finish is dry and clean without any harsh or bitter aftertaste.
Mouthfeel. Medium-light to medium body with a noticeable smoothness and light creaminess from the wheat. High carbonation provides an effervescent, prickly sensation. Refreshing and clean, with no alcohol warmth or astringency.
