Garden Path Fermentation The Wet Hopped Ship

Other Styles 5.2 º
This wild-influenced Brett Beer showcases a rustic complexity driven by Skagit-grown fresh hops and a traditional coolship process. Fermented in an open-top foudre and blended with barrel-aged components, it leads with an aromatic bouquet of grassy, resinous wet hops intertwined with funky nuances of dried hay and earthy leather. The profile is remarkably dry, bolstered by natural honey conditioning that leaves a crisp, effervescent finish. Subtle oak tannins from the foudre add structure to the bright, fruity esters, creating a harmonious balance between raw harvest freshness and mature cellar depth.
Appearance. 3–6 SRM. Pale gold to deep yellow. Hazy with a persistent, finely-beaded white head and moderate lacing. Effervescent.
Aroma. Moderate to high intensity. Prominent fresh, grassy, and herbal wet hop character. Secondary notes of Brettanomyces funk (wet hay, horse blanket, dusty earth) are well-integrated with fruity esters of apricot and lemon. Subtle floral honey and a light oak-derived vanilla or coconut hint.
Taste. The initial impression is bright and crisp, featuring stone fruit and citrus zest flavors. Assertive hop character presents as fresh-cut grass and pine resin. Low to moderate bitterness (approx. 20-30 IBU) is balanced by a light, lemony tartness and mineral notes. The mid-palate reveals aged complexity with earthy funk and mild tannins. Finish is bone-dry and clean with a lingering herbal aftertaste.
Mouthfeel. Medium-light body. High carbonation from natural conditioning provides a prickly, refreshing sensation. Very low alcohol warmth. Slight tannic astringency from the foudre aging adds a pleasant structure without being harsh.

Hyperlocal Ingredients – Oak Vessels – 100% Native Yeast

Located in the beautiful Skagit Valley in Northwest Washington, with its uniquely fertile soils and cool, temperate climate, Garden Path Fermentation is one of very few producers in the world that’s able to make beer, wine, cider, and mead, all using ingredients sourced from our own backyard, and may be the only one to do so using only native yeast fermentation.

Our own production process draws on old-world brewing and winemaking techniques from a variety of traditions, which we reinterpret and adapt to take advantage of our abundant local resources, including Skagit-grown and locally-malted grain, Skagit-grown fruit, much of which we tend to ourselves, locally-cultivated honey, and organic hops from our friends’ nearby farm. Fermentation takes places in oak barrels of varying sizes, including a large, open-top foudre, and each unique batch is a singular expression of time and place that we can never recreate.
