This Skagitonian Grisette provides a rustic, sessionable experience centered on native yeast fermentation. It presents a delicate balance of light lactic tartness and earthy barnyard funk that highlights its farmhouse heritage. The malt profile is exceptionally soft and grainy, showcasing local cereal grains, while the hopping remains understated with a floral, continental character. Aromas of lemon zest and white pepper mingle with a mild hay-like quality. On the palate, the beer is bone-dry and effervescent, delivering a refreshing snap of acidity that cleanses the tongue. It serves as a quintessential table beer, emphasizing high drinkability and regional terroir-driven complexity.
Appearance. Pale straw to light gold (3–4 SRM). Features a dense, rocky white head with excellent retention and delicate lacing. Unfiltered with a slight, persistent haze.
Aroma. Moderate intensity. Dominant fruity esters of lemon and green apple are paired with a noticeable native yeast funk, exhibiting notes of hay and damp earth. A low, spicy hop character complements the peppery phenols. The malt presents a faint, rustic, cracker-like graininess.
Taste. Initial impression is refreshingly tart and crisp. The flavor profile features soft, grainy malt and a low spicy hop flavor. Native yeast contributes complex layers of peppercorn and a mild barnyard funk. Bitterness is low to moderate, but the high attenuation and light acidity create a very dry, clean, and snappy finish.
Mouthfeel. Light body with no alcohol warmth. High carbonation leads to an effervescent, prickly sensation on the tongue. Crisp and refreshing with no astringency.

Hyperlocal ingredients – oak vessels – 100% native yeast

Located in the beautiful Skagit Valley in Northwest Washington, with its uniquely fertile soils and cool, temperate climate, Garden Path Fermentation is one of very few producers in the world that’s able to make beer, wine, cider, and mead, all using ingredients sourced from our own backyard, and may be the only one to do so using only native yeast fermentation.

Our own production process draws on old-world brewing and winemaking techniques from a variety of traditions, which we reinterpret and adapt to take advantage of our abundant local resources, including Skagit-grown and locally-malted grain, Skagit-grown fruit, much of which we tend to ourselves, locally-cultivated honey, and organic hops from our friends’ nearby farm. Fermentation takes places in oak barrels of varying sizes, including a large, open-top foudre, and each unique batch is a singular expression of time and place that we can never recreate.
