This Skagitonian grisette presents a rustic, complex sensory profile within a delicate session-strength frame. Native yeast fermentation in oak foudres imparts a subtle, earthy funk and a gentle, refreshing tartness. The grist of barley, wheat, and rye provides a crackery, slightly spicy foundation with a soft, hazy texture. Delicate floral and wildflower honey notes emerge from bottle conditioning, weaving through a bouquet of lemon zest and dusty hay. It finishes exceptionally dry and effervescent, showcasing a masterful balance between wild microflora, local grains, and a faint, woody structure from its time in the foudre.
Appearance. Pale straw to light gold (3-4 SRM). Hazy and unfiltered with a voluminous, mousse-like white head that shows excellent retention and fine Belgian lacing. Highly effervescent.
Aroma. Moderate to high intensity. Bright lactic tartness and lemon zest lead, followed by rustic grain notes of spicy rye and bready wheat. Distinctive native yeast character offers earthy, floral, and very light barnyard funk. Subtle floral honey and a whisper of neutral oak woodiness are present.
Taste. Initial impression is crisp and lightly tart. A grainy, cracker-like malt base is accented by the peppery spice of rye and the soft tang of wheat.
