Deep golden hues give way to an aroma of toasty Vienna malt, wild honey, and soft, wood-derived vanillin from extended oak aging. The palate leads with a biscuity richness, followed by a delicate, dry honey character and a subtle, funky tang from the mixed fermentation. Well-conditioned and effervescent, it balances a moderate alcohol presence with a clean, tannic finish. This beer showcases a masterful interplay between malty structure and the elegant, wild terroir of its fermentation profile.
Appearance.Deep gold to amber (10-14 SRM) with a slight, hazy luminescence from the mixed fermentation. Features a dense, off-white head with excellent retention and fine-beaded lacing.
Aroma.High intensity featuring complex toasty malt and bready Munich malt character. Distinctive notes of floral honey, light oak vanillin, and a faint, rustic funk. Low spicy hop notes and moderate pear-like esters.
Taste.Initial impression of rich, biscuity malt sweetness that quickly transitions to a dry, complex mid-palate. Subtle tartness and earthy funk from the mixed culture complement flavors of toasted grain and fermented honey. Low spicy hop flavor and moderate bitterness (approx. 25 IBU) provide balance. The finish is crisp, dry, and slightly tannic from the oak aging.
