Garden Path Fermentation Dare To Be Stupid!

This native yeast piquette offers a delicate, rustic profile, capturing the essence of a traditional orchard floor. Fermented with a blend of cider apple pomace and juicy dessert pears, the character is inherently earthy and wild. The low alcohol content allows the subtle tannins from the fruit skins and the floral lift of the pears to shine without being overshadowed by booziness. Its lightly sparkling nature enhances a refreshing, tart acidity typical of spontaneous fermentation. Expect a lean, vinous experience that celebrates the raw complexity of heirloom fruit skins and the funky, nuanced depth provided by the house microflora. This Specialty Cider/Perry is elegantly bone-dry and exceptionally sessionable.
Appearance. Pale straw to light yellow (2-3 SRM). Sparse, quickly dissipating white head with minimal lacing. Slight haze is present, characteristic of an unfiltered, native yeast fermentation.
Aroma. Moderate intensity with a sharp, rustic profile. Prominent notes of green apple skin and floral dessert pears are complemented by farmhouse funk, including hints of dried hay and light earthy minerals. No hop or malt character.
Taste. Initial impression is bone-dry and sharply tart. Flavors of underripe pear and cider apple skins dominate, supported by a mild tannic grip. High acidity from the native yeast provides a clean, zesty palate. The finish is short, crisp, and slightly astringent, with a lingering vinous quality.
Mouthfeel. Light-bodied and lean. Carbonation is low to medium-low, providing a soft, lightly sparkling effervescence. No alcohol warmth is perceived. Noticeable but pleasant fruit-skin astringency.

Dare to Be Stupid is our very first cider piquette! Piquette is technically not cider (or wine); it’s a low-alcohol beverage made by adding water to pomace (the seeds, skins, and other parts leftover from pressing fruit) and letting it ferment with native yeast. We used the apple pomace from our first cider pressing in October and also the juice of some dessert pears, all from the WSU orchard in Mt Vernon. The nose is pure orchard fruit, with a delicate palate and a hint of sparkle. Dare to Be Stupid was made in collaboration with our good friend Dwayne Smallwood of @bridgeandtunnelbottlesandtaps in Astoria, Oregon, inspired by a late-night text conversation about Weird Al Yankovic. We dared—and it turns out this isn’t stupid at all.
