Garage Project’s Yuzukoshō reimagines the traditional Gose through the lens of a classic Japanese seasoning. Built on a crisp base of Pilsner malt, this kettle-soured ale presents a vibrant, refreshing profile defined by the bright, aromatic zest of green yuzu. The addition of sea salt enhances the mouthfeel, creating a mouthwatering effect that perfectly complements the beer’s clean, lactic tartness. A subtle, warming undercurrent of green chilli provides a delicate, piquant heat on the finish, without overwhelming the palate. It is a masterful balance of salty, sour, and spicy notes, capturing the essence of seasonal freshness in a highly effervescent and sessionable format.
Appearance. Pours a hazy, pale yellow (3–4 SRM) with a moderate, tight-bubbled white head that shows good retention and light lacing. Highly effervescent with a visible shimmer of carbonation.
Aroma. High intensity, dominated by the bright, zesty, and floral aroma of green yuzu citrus. A clean, sharp lactic acidity underpins the fruit, accompanied by a subtle herbal spice from green chilli and a light, bready Pilsner malt base. No hop aroma is present.
Taste. Initial impression is sharply tart and refreshing. Moderate lactic sourness is balanced by a light, doughy malt flavor. The flavor is defined by zesty yuzu and a noticeable but integrated sea salt character that provides a savory edge. Bitterness is very low. The finish is bone-dry and crisp, punctuated by a delicate, piquant warmth from green chilli that lingers alongside a salty citrus aftertaste.
Mouthfeel. Medium-light body with very high, effervescent carbonation. The sea salt contributes a mouthwatering, tingly sensation and a perceived roundness to the palate. A subtle, clean warmth from the green chilli provides interest without harshness or astringency.
