The double-dipped use of second-use raspberries and organic heritage plums creates a nuanced, layered profile. The wild fermentation imparts a complex funk and citrusy acidity, while the oak provides a structural, dry finish with subtle wood tannins. Appearance. Deep ruby-red with violet highlights and a slight haze. Features a frothy, pale pink head with moderate retention and light lacing.
Aroma. High intensity; dominant lactic tartness and funky wild yeast notes of damp hay and leather. Bright, zesty raspberry esters mingle with floral, stone-fruit aromas from heritage plums, backed by subtle toasted oak and a hint of vinous acidity.
Taste. Assertive initial tartness with a complex fruit medley. Raspberries lend a sharp, acidic bite, while heritage plums provide a mellow, jammy depth. Malt flavor is minimal, offering a neutral cracker base. The fermentation is dry and funky with nearly zero hop bitterness. Finishes bone-dry with a lingering berry zest and soft wood tannins.
Mouthfeel. Medium-light body with high, prickly carbonation. A mild, pleasant alcohol warmth is present, integrated well with a light astringency from fruit skins and oak that enhances the drying finish.
