This Imperial Stout offers an indulgent sensory descent into darkness. An intense, complex malt bill provides a foundation of espresso and scorched grain, while decadent additions of cacao nibs and vanilla pods create a rich, bittersweet chocolate ganache profile. The inclusion of peppermint candy introduces a cooling, aromatic lift that pierces through the velvet-like viscosity. At 11.5% ABV, the beer carries a smooth, integrated warmth. This is a bold interpretation of the style, balancing aggressive roasted malt character with the nostalgic, confectionery brightness of chocolate-mint treats for a lingering, luxurious finish that remains harmonious despite its intensity.

Appearance. Jet black (40+ SRM) and completely opaque. It pours with a dense, persistent dark tan head that leaves significant lacing on the glass. High viscosity is visible through thick legs.

Aroma. High intensity. Dominant notes of bittersweet chocolate and cooling peppermint are immediately apparent. Underlying rich, roasted malt scents of espresso, black licorice, and charred toast follow. Secondary notes of creamy vanilla and dark dried fruits like raisins and prunes provide depth. Hop aroma is very low, primarily masked by the adjuncts.

Taste. The initial impression is an explosion of mint-chocolate confectionery, followed by a heavy roasted malt backbone. Flavors of cocoa, dark-roasted coffee, and burnt currants are supported by a smooth vanilla sweetness. Bitterness is medium-high, derived from both hops and roasted grains, balancing the decadent adjuncts. The finish is long and bittersweet, with a lingering peppermint tingle and a hint of dark fruit esters.

Mouthfeel. Full-bodied, chewy, and luscious with a velvety, syrupy texture. Carbonation is low to moderate. A smooth, well-integrated alcohol warmth is noticeable and pleasant, providing a comforting glow without being sharp or solventy.
