This sparkling kettle sour opens with an intense aromatic profile of pineapple candy and bright citrus. On the palate, juicy, sun-ripened pineapple flavors are immediately countered by a crisp, zesty acidity and the distinctive, creeping warmth of fiery Habanero peppers. The addition of agave syrup rounds out the mid-palate, though the beer remains remarkably clean and dry. Refreshing and bold, it offers a sophisticated interplay between fruit-forward sweetness and a lingering, spicy chili kick that defines its playful yet complex character.

Appearance. Pale straw to light gold (SRM 2-4). Generally clear with a slight, natural haze from the fruit addition. Pours with a white, effervescent head that shows moderate to low retention, typical for high-acidity styles.

Aroma. High intensity aromatics of sweet pineapple candy and freshly sliced tropical fruit. A clean, sharp lactic tartness provides a citrus-like backing. A subtle, spicy vegetal note from the Habanero is present but remains secondary to the dominant fruit. No hop aroma or fermentation byproducts like diacetyl are present.

Taste. The initial impression is a sharp, clean lactic tang followed by a burst of succulent, ripe pineapple flavor. A light, earthy sweetness from the agave syrup appears briefly before yielding to a building, spicy heat from the Habanero peppers. Hop bitterness is absent. The finish is remarkably dry, acidic, and crisp, with a lingering tropical fruit ester and a warm chili glow.

Mouthfeel. Light-bodied and lean. High carbonation creates a prickly, sparkling sensation on the tongue. Alcohol warmth is negligible at this ABV, though the Habanero provides a distinct, spicy tingling sensation. Refreshingly crisp with no perceptible astringency.
