This Wild Specialty Beer is a luminous tribute to the Otago harvest, capturing the essence of sun-ripened peaches through a patient, year-long transformation. Aged in large oak foeders, the mixed fermentation base develops a complex, funk-forward profile that perfectly complements the lush stone fruit character. The addition of golden marigolds introduces a bright, botanical layer of floral aromatics. On the palate, a vibrant acidity balances the aromatic sweetness of the peaches, while the extensive time in wood lends a subtle, structured tannin. Expect a radiantly golden pour with a dry, lingering finish that evokes the fading warmth of a late summer afternoon.

Appearance. Radiant golden to light amber (7-9 SRM). Slight haze from fruit solids and wild yeast. Pours with a moderate white head that shows fair retention for a sour style, leaving fine lacing.

Aroma. High aromatic intensity. Dominant sun-ripened peach notes blend with complex wild fermentation characteristics, including hay, light leather, and earthy funk. Distinctive bright floral notes from marigolds emerge alongside subtle vanillin and toasted oak from the foeder aging.

Taste. Initial impression is a sharp, clean lactic sourness. Deep peach flavors follow, moving from juicy fruit flesh to tart skin. Virtually no hop bitterness or flavor. The fermentation profile is complex and funky, supported by neutral oak tannins. The finish is bone-dry and crisp with a lingering floral and stone fruit aftertaste.

Mouthfeel. Medium-light body with high, prickly carbonation from bottle conditioning. A slight tannic astringency from the oak and peach skins adds structure and enhances the dry sensation. Negligible alcohol warmth.
