Edgar is an evocative, super-strength Saison that pushes the boundaries of the farmhouse tradition through a sophisticated collaboration with Sapwood Cellars. This brilliant gold ale presents a complex sensory tapestry, defined by the addition of Sauvignon Blanc-derived Phantasm which yields intense, otherworldly notes of gooseberry, white grape, and zesty citrus. Fermentation with diverse house cultures introduces a spicy, peppery phenolic depth alongside vibrant fruit esters. Months of oak barrel aging contribute a structured, subtle tannin and a hint of vanilla, grounding the ethereal fruit character. The result is a highly attenuated, effervescent ale that balances rustic graininess with a unique, beautiful strangeness.
Appearance. Brilliant gold (6 SRM) with exceptional clarity. Topped by a long-lasting, dense, rocky white head that leaves intricate Belgian lace. Highly effervescent with visible carbonation.
Aroma. High intensity. A complex bouquet of white grape, gooseberry, and grapefruit from the Phantasm, layered over spicy black pepper phenols and pome fruit esters. Low grainy malt and a delicate woody, vanilla-tinged oak presence are evident.
Taste. Initial impression of bright citrus and tropical fruit, followed by a soft, grainy malt backbone. Medium-high spicy yeast character and moderate bitterness lead to a very dry, crisp finish. Subtle oak tannins provide structural complexity and a lingering, spicy aftertaste. Alcohol is clean and well-integrated.
Mouthfeel. Medium body with very high carbonation, creating a lively, effervescent texture on the palate. Noticeable but smooth alcohol warmth is present. Very low astringency from the oak aging.

They’re one of our favourites and one of those breweries that are so reliable across their core range, their limited run IPAs and even their wild and whacky projects. They created the Wild Workshop as a playground for creating all things weird and wonderful: barrel-aged sours, spontaneous ferments, beer-wine hybrids, and tanks brimming with fruit.
Edgar was a collaborative mission with Maryland’s Sapwood Cellars. Combining some of each of their house cultures to get a truly rogue fermented farmhouse ale. Then barrel aged and laced with Phantasm. Super tasty with interesting flavours of white wine grape and gooseberry, along a really balanced acid backbone.
