This Double IPA presents as an assertive, nectar-like experience, emphasizing the tropical fruit intensity of Simcoe and Mosaic hops. The aroma is dominated by ripe mango and stone fruit, supported by a subtle resinous pine and berry depth. While it leans into the lush, juicy character of an East Coast style, it maintains the strength and hop-forward focus of a powerful ale. The palate is saturated with tropical fruit flavors, balanced by a soft but present bitterness and a clean malt backbone. At 8.5% ABV, it offers a smooth warmth that complements its dense, hazy texture and saturated hop profile.
Appearance. Deep gold to light orange (7-9 SRM). Opaque and heavily hazy with a thick, persistent, creamy white head that leaves dense lacing.
Aroma. High intensity hop aroma. Pronounced notes of ripe mango, passionfruit, and blueberry from the Mosaic addition, paired with earthy pine and grapefruit peel from Simcoe. Background malt is neutral and doughy, with a very low, clean ester profile and no solventy alcohol.
Taste. Powerful hop flavors mirror the aroma with mango nectar, pineapple, and subtle resinous dankness. Initial impression is juicy and sweet, though it transitions to a moderate-high bitterness that prevents a cloying finish. Malt is supportive and soft, providing a clean grain character. Finish is medium-dry with a lingering tropical hop resin aftertaste.
Mouthfeel. Medium-full body with a creamy, soft texture. Carbonation is moderate. Noticeable but well-integrated alcohol warmth. No harsh hop-derived astringency.
