Celestial Odyssey is a complex Wild Specialty Beer that masterfully bridges the gap between a lush Hazy Double IPA and a tangy wild ale. A vibrant aromatic profile led by Idaho 7, Strata, Simcoe, and Citra hops explodes with notes of overripe mango, passionfruit, and bright citrus. The inclusion of foeder-aged wild beer introduces a cleansing lactic acidity and subtle oak depth, creating a captivating "sweet and sour" dynamic. Its soft, pillowy texture from the East Coast influence carries juicy fruit tartness through to a refreshing finish, where tropical hop saturation meets sophisticated wild funk and sophisticated wood character.
Appearance. Deep gold with a heavy, opaque haze. Pours with a thick, frothy off-white head that shows moderate retention, leaving slight lacing despite the acidic environment.
Aroma. High aromatic intensity. Immediate punch of tropical fruit, specifically pineapple and passionfruit from Idaho 7 and Strata. This is layered with citrus zest from Citra and a resinous, piney undertone from Simcoe. A secondary layer reveals moderate lactic tartness and a whisper of funky, earthy wild yeast, backed by a faint oaky sweetness from foeder aging.
Taste. The palate is a striking union of juicy hop sweetness and sharp fruit tartness. Initial flavors of mango and peach transition into a bright, lemon-like acidity. The hop bitterness is low, allowing the sourness to provide the primary structure. Malt character is doughy and supportive. The finish is long and complex, balancing lingering tropical fruit esters with a clean, puckering acidity and soft oak notes.
Mouthfeel. Medium-full body with a soft, creamy texture. Carbonation is moderate, providing a lively lift that accentuates the tartness. A noticeable but well-integrated alcohol warmth is present, though the acidic finish prevents any heavy or cloying sensation.
