Garage Project’s Cafe Fizz is a vibrant Straight Sour Beer that reimagines the coffee plant through a botanical lens. Foeder aging provides a sophisticated, slightly woody foundation for a bright, lactic acidity. Infusions of lemon zest and Acai berries create a zesty, tart profile, while vanilla bean adds a subtle, smoothing aromatic roundness. Most distinctive is the use of Rich Coffee cascara, which imparts a lively, dried-cherry fruitiness and a unique coffee-skin earthiness. The result is a refreshing, light pink ale that balances sharp acidity with a complex, fruit-forward bouquet and a crisp, effervescent finish.

Appearance. Light pink with subtle orange highlights (5-7 SRM). Clear to slightly hazy. Moderate, white to pale pink head with poor to fair retention and lively effervescence.

Aroma. High intensity. Dominant sharp lactic sourness and bright lemon zest. Pronounced fruity esters of tart cherry and dark berries from the cascara and Acai berries. Subtle, creamy vanilla bean and a faint, earthy, wood-aged foeder note. No hop aroma.

Taste. High lactic acidity dominates the initial impression. Flavors of zesty lemon and tangy Acai berries lead into a distinct dried cherry and herbal character from the Rich Coffee cascara. Malt is low, providing a thin biscuity backdrop. Vanilla bean softens the mid-palate without adding residual sugar. No hop bitterness or flavor. Finish is very dry, crisp, and zingy with lingering berry tartness.

Mouthfeel. Medium-light body. High carbonation. Light, well-integrated alcohol warmth. Sharp, crisp acidity creates a puckering sensation. Low tannin-driven astringency from the cascara and foeder aging.
