This Imperial Stout offers a massive, multifaceted sensory experience, merging the deep, roasted essence of dark chocolate and espresso with the unique terroir of New Zealand. Te Matuku Bay oysters contribute a faint, savory mineral complexity that enhances the beer’s rich, decadent foundation. The addition of Horopito introduces a distinctive peppery warmth and subtle herbal citrus notes, cutting through the intense malt sweetness. At 12% ABV, the palate is greeted by a luxurious, velvety texture and a significant, well-integrated alcohol bloom. The finish is long and bittersweet, layering charred grain with lingering spice and dark fruit esters.

Appearance. Opaque, jet black pour with a thick, dense, dark tan head that shows moderate retention. High viscosity is evidenced by visible legs on the glass as it is swirled.

Aroma. High intensity with dominant notes of bittersweet chocolate, roasted coffee beans, and black licorice. Distinctive peppery and herbal spice from the Horopito mingles with dark fruit esters of plum and raisin. A subtle, clean maritime brine is perceptible in the background.

Taste. Initial impression is of rich, dark malts and cocoa. The mid-palate introduces a sharp, spicy kick from the Horopito, balanced by a firm hop bitterness. A savory, mineral-like quality from the oysters provides depth. Finishes with a lingering warmth, dark roasted grain, and a complex, peppery aftertaste.

Mouthfeel. Full to very full-bodied with a chewy, luscious, and velvety texture. Carbonation is low to moderate, supporting the weight without being prickly. Noticeable, smooth alcohol warmth is present throughout.
