This massive Imperial Stout is a masterclass in decadence, defined by its intensive aging in Tasmanian Lark whisky barrels. The sensory profile is dominated by a complex trio of Tongan, Tahitian, and West Paupuan vanilla beans, which weave floral and spicy sweetness into a foundation of bittersweet chocolate and espresso. Deep malt richness provides notes of burnt sugar and dark fruit, specifically raisins and figs. The high alcohol content is well-integrated, offering a sophisticated warmth that complements the charred oak and spirit character. It finishes with a lingering, velvety sweetness, balancing intense roast with a creamy, spice-laden vanilla elegance.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a dense, persistent dark mocha-colored head that leaves thick, oily legs on the glass, indicative of its high viscosity and alcohol content.
Aroma. High intensity. Dominant aromas of Tahitian and Tongan vanilla provide floral and spicy notes, while West Paupuan vanilla adds a creamy, earthy depth. A strong base of roasted malt offers bittersweet chocolate, espresso, and light char. Significant barrel influence from the Lark barrels introduces toasted oak, peppery whisky, and caramel. Esters of dried plums and raisins are prominent.
Taste. Initial impression is of rich dark chocolate and vanilla sponge cake. The malt profile is deeply roasty but smooth, avoiding harshness. Lark whisky barrel aging contributes notes of toasted oak, spice, and a subtle spirituous depth. While hop bitterness is medium-high, it is balanced by significant residual sweetness and a high alcohol presence. The mid-palate reveals dark fruit and cocoa, leading to a long, warm, and sweet finish with lingering vanilla.
Mouthfeel. Full to very full-bodied with a thick, syrupy, and velvety texture. Carbonation is low to moderate. Significant alcohol warmth is present but remains smooth and well-integrated. Extremely creamy and palate-coating.
