This amber-hued ale blends the traditional malty richness of the style with the vibrant, refreshing acidity of stone fruit. The influence of the Saison yeast introduces a delicate layer of peppery spiciness and subtle phenols that intertwine with the natural cherry tartness. While the malt profile remains foundational—offering hints of toasted bread and light caramel—the hops retreat into the background, allowing the interplay between fermentation character and whole fruit to define the experience. It is a complex, elegantly balanced farmhouse ale with a dry, intriguing finish.

Appearance. Deep amber to copper with a soft reddish tint from the cherries; slight haze with good clarity; persistent off-white to pale pink-tinged head with fine lacing (SRM 12–16).

Aroma. Moderate to high intensity. Prominent toasted malt and biscuity notes are layered with bright, natural tart cherry aromatics. Subtle spicy, peppery phenols from the yeast and low fruity esters like plum and red apple are present. Hop aroma is negligible, showing only faint herbal notes.

Taste. Initial impression of rich, toasted malt and light caramel, quickly followed by a clean, refreshing tart cherry flavor. Moderate peppery spiciness provides fermentation complexity. Hop bitterness is low, providing just enough support to keep the malt and fruit in balance. The finish is medium-dry and crisp, with a lingering natural cherry skin tartness rather than cloying sweetness.

Mouthfeel. Medium body with a smooth, silky texture. High carbonation provides a lively, refreshing mouthfeel. Moderate alcohol warmth is present but well-integrated. Very low astringency from the fruit skins.
