This West Coast IPA presents a masterclass in modern hop expression, anchored by the crisp, clean fermentation of US-05 yeast. A bright foundation of Weyermann malts allows the complex interplay of Citra, Mosaic, and Simcoe to dominate the senses. Expect a vibrant sensory profile defined by Citra’s punchy grapefruit and tropical notes, further intensified by the use of YCH702 extract. Mosaic adds layers of ripe berry and stone fruit, while Simcoe provides a classic resinous pine backbone. The finish is assertively bitter and remarkably dry, staying true to the clean 'westie' profile while maintaining a refreshing, translucent clarity.
Appearance.Brilliant gold to light amber (approx. 7 SRM). Topped with a persistent, fine-beaded white head that leaves significant lacing on the glass.
Aroma.High intensity hop aroma featuring layers of grapefruit, passion fruit, and mango from the Citra and Mosaic, balanced by a distinct evergreen pine and resinous note from the Simcoe. Low, clean, grainy-sweet malt aroma provides a neutral backdrop.
Taste.Initial hop-forward punch of citrus zest and tropical fruit. Firm, clean bitterness emerges immediately and carries through to the finish. A lean, bready malt character supports the hops without adding sweetness. Fermentation is exceptionally clean, leading to a bone-dry and crisp aftertaste with lingering resin and citrus peel.
Mouthfeel.Medium-light body with a smooth, non-astringent texture. High carbonation enhances the crisp, refreshing character. Very subtle, well-integrated alcohol warmth may be present.
