R.I.C.C.I. is a decadent Imperial Stout that presents a deep, layered sensory experience centered on specialty Guatemalan La Primavera coffee. The complex grist, featuring roast and caramel malts alongside oats, wheat, and rye, establishes a velvety, full-bodied dark chocolate foundation. Fermentation with organic dates imparts a subtle, dark-fruit sweetness that complements the medium-roast coffee’s natural acidity. Aromas of vanilla and rich cocoa lead into a palate defined by espresso, caramelized sugars, and a hint of spicy rye grain. The finish is remarkably long and roasted, carrying a touch of wood-ash and integrated alcohol warmth suited to its significant strength.
Appearance. Opaque, ebony-black (SRM 40+) with a thick, creamy, dark-tan head that exhibits excellent persistence and leaves dense lacing.
Aroma. High intensity aroma dominated by fresh-ground La Primavera coffee, layered over dark chocolate, vanilla, and sweet molasses. Subtle dark fruit notes of dried dates and raisins emerge, supported by deep-toasted grain and a hint of peppery rye spice.
Taste. Rich and multifaceted; initial dark chocolate and espresso flavors are met by the mid-palate sweetness of dates and caramel malts. Hop bitterness is low, but the balance is maintained by roasted grain and coffee acidity. The finish is lingering and complex, showcasing toasted bread, charred oak, and a faint, pleasant ashiness.
Mouthfeel. Full-bodied and viscous with a luxurious, velvety texture provided by the addition of oats and wheat. Moderate carbonation supports the weight, while a noticeable but smooth alcohol warmth glows in the throat without being harsh.
