Polybius is a vibrant Hazy Session IPA that showcases the expressive potential of New Zealand terroir. Dominated by the novel Peacharine hop, the profile is defined by a lush array of stone fruits, specifically ripe peach and nectarine, layered over a tropical foundation. These stone fruit notes are sharpened by the distinct, zesty lime character of Motueka and the grapefruit and piney resin provided by Waimea. Despite its hazy character, the beer remains exceptionally sessionable with a light, supporting malt backbone that allows the southern hemisphere hops to remain the primary focus through a clean, refreshing finish.
Appearance. Straw to medium gold. Opaque with a heavy haze and a thick, persistent white head that leaves significant lacing.
Aroma. High intensity hop-forward bouquet. Dominant notes of fresh peach, nectarine, and apricot from Peacharine hops, complemented by bright lime zest and a touch of grapefruit pith. Low, clean, bready malt sweetness in the background with a slight resinous pine undertone.
Taste. Initial impression is of intense stone fruit flavors, specifically peach and tropical nectar. A mid-palate of citrus-driven lime and pomelo transitions into a light resinous finish. Malt character is low and grainy, providing a neutral canvas. Bitterness is moderate but firm, balancing the fruity esters. The finish is dry and hoppy with a lingering citrus aftertaste.
Mouthfeel. Medium-light body with a soft, creamy texture. Carbonation is medium-high, providing a lively prickle on the tongue. Very low alcohol warmth, consistent with its sessionable strength. No astringency.
