Ale de hace unos años. Este año tuvimos la oportunidad de elaborar nuestra primera Wet-hop IPA, y los arrebatamos apenas pudimos. Como las flores de lúpulo tienen entre 6 y 8 veces más agua que los pellets, hay que usar cantidades enormes. También hay que usarlas super rápido porque se oxidan facilmente. Esto significa un viaje de madrugada a Llagostera a cosechar y llevar 75kg de flores y llevarlos rápido a la fábrica para agregarlos instantaneamente al whirlpool, llenando la fábrica de un hermoso aroma a resina. El otro desafío es que no es fácil determinar los grados de amargor, ya que las flores de lúpulo no llevan analisis de laboratorio a este punto, Por este motivo, decidimos ir con una carga moderada de amargor al comienzo del hervor para asegurar que teniamos los IBUs deseados antes de que las flores hicieran su trabajo. El dryhop fue con Mosaic y montón de chinook T90, en uno de nuestros combos favoritos de lúpulos pero que no usamos demasiado.. El resultado? una IPA robusta, resinosa con muchos toques cítricos y un poco de ese mango maduro. En boca se percibe mucha resina, emparejada de zumo tropical y el toque justo de pomelo para acabar. Esta IPA cuanto más fresca mejor, asi que date prisa!

The next of our beers featuring local ingredients is a first for Garage. Biolupulus have been growing some great organic hops for a few years now including the beautiful Lolita that we used in Embryo Pale Ale a couple of years ago. This time we have had the opportunity to brew our first wet hop IPA and we snatched at the chance. As wet hops contain 6-8 times more water than T90 hop pellets you have to use huge quantities.They also oxidise quickly so they must be used as soon as possible. This meant a very early morning trip to pick 75kg of hop cones and transport them back to the brewery where we added them all to the whirlpool filling the brewery with beautiful grassy resin. The other challenge in wet hop brewing is that lab analysis has not been carried out on the cones at this stage so determining bitterness is difficult. We added a moderate bittering charge at the start of the boil to ensure we got enough IBUs in before the wet hops did their work. The beer was later dry hopped with Mosaic and plenty of T90 Chinook in what is a bit of a favourite combo for us but is under used. The result is a big, fresh piney grassy IPA with plenty of citrus and some sweaty mango. On the taste a noticeable resinous character is present padded with some tropical juice and then a pithy, grapefruit finish. This IPA will be at it’s best when fresh so get a hold of it fast! Less
