This refreshing Straight Sour Beer bursts with a vibrant citrus and stone fruit profile driven by Amarillo, Citra, Wai-iti, and Waimea hops. Brewed with Extra Pale malt and wheat, the grist provides a delicate bready foundation for the sharp, clean lactic acidity developed through kettle souring with Lactobacillus. Fermentation with London Fog yeast enhances the ester profile, contributing to the beer’s lush, juicy character. Expect a bright, sherbety experience on the palate that balances tartness with tropical hop notes, culminating in an incredibly crisp and pintable finish perfectly suited for spring sessionability.

Appearance. Pale straw to light gold (2–3 SRM). Features a slight haze from the wheat grist and yeast choice. Pours with a large, frothy white head that shows moderate to poor retention, typical of high-acid styles.

Aroma. Moderate to high intensity. Clean, sharp lactic sourness leads, followed by a punchy hop bouquet of lemon zest, peach, and apricot from the Amarillo and Wai-iti. Subtle bready malt notes and faint fruity esters from the London Fog yeast provide a soft background.

Taste. Immediate impact of clean, lemony lactic tartness. The mid-palate reveals layers of orange, grapefruit, and tropical stone fruit from the Citra and Waimea hops. Very low hop bitterness allows the acidity to remain the focal point. Finishes bone-dry and crisp with a lingering, sherbet-like fruitiness and grainy malt presence.

Mouthfeel. Medium-light body with high, effervescent carbonation. The acidity provides a sharp, mouth-watering crispness without being bitingly harsh. Alcohol warmth is negligible, enhancing the overall refreshment.
