This Hoppy Saison pays homage to Wallonian harvest traditions with a vibrant, modern hop character. A foundation of Pilsner and Munich malts provides a delicate, grainy, and slightly honeyed backbone, while the addition of corn grits ensures a rustic, crisp profile. The sensory experience is led by a complex hop bouquet: Centennial and Citra offer bright grapefruit and tropical fruit notes, while Sorachi Ace introduces a distinctive lemon-verbena and herbal signature. Fermented to achieve a wild, farmhouse essence, the beer displays prominent peppery phenols and stone fruit esters, culminating in an exceptionally dry, refreshing finish that balances firm bitterness with rustic yeast complexity.

Appearance. Deep gold to pale orange in color with a slight, hazy yeast cloudiness. Features a dense, rocky, white head with excellent retention and thick Belgian lacing. Highly effervescent.

Aroma. High intensity with a complex blend of citrusy hops and spicy fermentation. Notes of lemon zest, grapefruit, and a hint of dill-like herbality are prominent. These are supported by moderate peppery phenols, pear-like esters, and a soft, grainy-sweet malt background.

Taste. Initial impression is bone-dry and hop-forward. Flavors of lemon, tropical mango, and citrus pith predominate, followed by a mid-palate of cracked black pepper and clove-like phenols. The malt flavor is low, offering a subtle bready quality. Bitterness is firm and assertive, leading into a long, spicy, and extremely clean finish with a lingering herbal aftertaste.

Mouthfeel. Medium-light body with very high, prickly carbonation that creates a refreshing, effervescent scrub on the palate. A light, well-integrated alcohol warmth is present but subtle. No astringency.
