This Tropical Sour, a collaboration with Blackout Brewing, presents an exotic sensory profile defined by a vibrant blend of tropical fruits. Intense aromas of sun-ripened mango and tangy passionfruit dominate the nose, followed by the soft, creamy sweetness of coconut and the floral musk of guava. On the palate, a bright, clean acidity provides a sharp counterpoint to the lush fruit character, while the coconut lends a smooth, rounded finish that softens the tartness. It is a refreshing and complex Wild Specialty Beer that balances aggressive fruit expression with a delicate wild fermentation backbone.
Appearance. Pours a glowing, hazy golden-yellow with a slight orange tint. The head is white and fine-textured, showing moderate to poor retention and minimal lacing, typical for the style.
Aroma. High intensity with dominant notes of tart passionfruit and tropical guava. A secondary layer of creamy coconut and sweet mango nectar is prominent. Very low crackery malt and a clean lactic sourness underpin the fruit, with a subtle, earthy wild yeast character in the background.
Taste. Vibrant and tangy initial impression. Guava and passionfruit provide a sharp acidity, followed by the fleshy sweetness of mango. Coconut emerges mid-palate, adding a creamy dimension that tempers the sourness. Bitterness is negligible, allowing the fermentation acidity to drive the balance. The finish is dry and crisp with a lingering tropical fruit aftertaste.
Mouthfeel. Medium-light body with moderate to high carbonation. The coconut provides a light creaminess that offsets the sharp acidity, resulting in a smooth yet refreshing mouthfeel without any perceptible alcohol warmth.
