This classic Weissbier presents a harmonious blend of traditional German heritage and subtle modern hop influence. Utilizing a specific liquid yeast from White Labs, it delivers a punchy profile of ripe banana and spicy clove. The addition of Mandarina Bavaria hops through light dry hopping introduces a refreshing layer of sweet mandarin and bright citrus, lifting the finish. Pale straw in color with a characteristic wheat haze, the palate balances doughy malt richness with a dry, effervescent conclusion. It is a vibrant, sessionable take on the style that marries authentic fermentation esters with a contemporary, citrusy zest.
Appearance. 3-4 SRM. Pale straw to light gold with a distinct, cloudy haze. Pours with a thick, moussy, and long-lasting white head that leaves persistent lacing.
Aroma. High intensity with dominant banana and spicy clove esters. Moderate bready and doughy wheat malt character. A subtle, fresh citrus note of mandarin orange is present from Mandarina Bavaria dry-hopping.
Taste. Initial impression is soft and bready. Moderate flavors of banana and clove are well-balanced against a grainy-sweet Pilsner malt backbone. Very low bitterness allows the yeast character and Mandarina Bavaria citrus notes to shine. Finishes relatively dry and clean with a lingering hint of sweet citrus.
Mouthfeel. Medium-light body with a fluffy, creamy texture derived from the high wheat content. High carbonation provides a spritzy, effervescent mouthfeel. No alcohol warmth or astringency.
