Noir C’est Noir is an opulent Grape Ale that masterfully bridges the worlds of brewing and viticulture. Utilizing Merlot grapes from Ardèche, it presents a deep, vinous character driven by spontaneous fermentation with indigenous grape yeast. The sensory profile is defined by rich notes of dark plum and black cherry characteristic of Merlot, beautifully layered with subtle vanilla and hints of warming spices. Despite its strength, the fermentation remains exceptionally clean, avoiding funk. Residual complex malt sugars provide a velvety depth and body, while a gentle underlying tartness from the soured wort balances the robust 11.1% ABV, creating a sophisticated, wine-like finish.
Appearance. Deep ruby to burgundy with brilliant clarity. A thin, pinkish-tan head with moderate retention and light lacing.
Aroma. High intensity aromatics of ripe Merlot grapes, specifically black cherry and plum. Subtle vanilla and a dusting of baking spices like clove and cinnamon emerge from the indigenous grape yeast. Low malt presence of lightly toasted bread; hop aroma is absent. Clean fermentation profile without brettanomyces or earthy funk.
