This wild-fermented English Porter delivers a complex sensory journey, driven by four months in freshly emptied Buffalo Trace bourbon barrels. Rich aromas of bittersweet chocolate, toasted caramel, and charred oak mingle with an intriguing rustic funk, reminiscent of leather and wild dark berries. On the palate, the comforting malt depth of toffee and biscuit is sliced through by a lively, slightly tart wild yeast complexity. Warm bourbon undertones, toasted coconut, and sweet vanilla weave into the finish, drying out the palate with a gentle oak tannin. It is a bold, beautifully uninhibited interpretation of a classic dark ale.
Appearance. Deep chestnut brown with brilliant ruby highlights when held to the light. It is crowned by a frothy, light tan head with moderate retention. Due to its wild nature, a slight, natural yeast haze is present.
Aroma. High intensity. Dark chocolate, toffee, and toasted bread malt notes are dominant, immediately followed by strong bourbon barrel character—notably vanilla, toasted coconut, and sweet charred oak. A complex, wild fermentation profile emerges underneath, displaying rustic barnyard funk, damp earth, and dried dark cherry esters. Hop aroma is negligible.
Taste. Initial impression reveals rich chocolate and nutty caramel malts, which are quickly enveloped by bourbon whiskey, oak wood, and smooth vanilla. The wild fermentation asserts itself mid-palate with an earthy, slightly tart dark fruit acidity. Bitterness is medium-low, balancing the residual sweet malt and spirit flavors. The finish is remarkably dry, lingering with roasted barley notes, complex funk, and warming oak tannins.
Mouthfeel. Medium body with a slightly creamy texture. Carbonation is moderate, providing a lively lift that lightens the dark malts. A gentle, pleasant alcohol warmth from the bourbon barrel aging is noticeable, balanced by a light, dry oak astringency on the back of the throat.
