This Specialty IPA presents a striking contrast between its deep, midnight-ebony hue and its vibrant hop profile. The aroma leads with high-intensity resinous pine and bright citrus notes, layered over a subtle foundation of dark chocolate and toasted bread from debittered roast malts. On the palate, a firm bitterness balances a medium-light body, offering flavors of grapefruit zest and forest floor alongside restrained cocoa. The finish is remarkably dry and clean, ensuring the roasted character remains a supportive whisper rather than a burnt distraction, epitomizing the Cascadian Dark Ale tradition and the bold intent of this festival collaboration.
Appearance. Deep dark brown to black (35-40 SRM) and nearly opaque. Topped with a persistent, moderate-sized tan head that exhibits good retention and leaves fine lacing.
Aroma. High intensity hop aroma featuring resinous pine, grapefruit, and subtle tropical fruit. Low malt character with clean notes of toasted grain and unsweetened cocoa. Clean fermentation profile with very low esters.
Taste. Initial impression is hop-forward with assertive bitterness. Hop flavors of citrus peel and pine resin dominate. Malt provides a medium-low backdrop of light chocolate and toast, avoiding any burnt or ashy character. The finish is dry with a lingering hoppy snap and a clean roasted aftertaste.
Mouthfeel. Medium body with a smooth, non-astringent texture. Moderate carbonation provides a crisp, refreshing mouthfeel. No perceived alcohol warmth.
