This Double IPA delivers an intense sensory experience driven by a double dry-hopped profile of Freestyle Nelson, Rakau, and Rakau SubZero Hop Kief. The aroma is saturated with bold stonefruit and ripe peach, immediately supported by vibrant notes of tropical mango and zesty grapefruit. On the palate, the vinous, white grape character of the Nelson hops emerges, cutting through a clean, neutral malt base. Despite its strength, the beer maintains high drinkability with a firm bitterness and a dry, lingering finish that highlights its complex New World hop character. It is a powerful, fruit-forward expression of the style.
Appearance. Deep gold to light orange (8 SRM). Features a moderate-sized, persistent, off-white head with good lacing. Displays a slight haze, common for modern double dry-hopped versions, but remains largely translucent.
Aroma. High intensity hop aroma dominated by stonefruit, peach, and mango. Distinctive vinous and white grape notes from the Nelson hops are prominent, accompanied by sharp grapefruit citrus. Malt is neutral and supportive, appearing as a light grainy note. Fermentation profile is clean with very low fruity esters.
Taste. Strong hop flavors of peach, apricot, and mango lead the palate, followed by zesty grapefruit and a touch of white wine character. Moderately high bitterness provides a firm structure but lacks harshness. The malt character is low and unobtrusive, allowing for a medium-dry, crisp finish. The aftertaste is long and hoppy, emphasizing tropical fruit resin.
Mouthfeel. Medium body with a smooth, soft texture. Carbonation is moderate. A well-integrated, gentle alcohol warmth is present, reflecting the 8% strength without being hot. Smooth mouthfeel with no hop-derived astringency.

After visiting Celestial to drink the best haze in Dallas on several trips in the past we are stoked to collaborate with them on this big and juicy DDH DIPA. We really ran with the 'everything's bigger in Texas' saying and absolutely loaded this one up with Freestyle T-90 and Hop Kief! You might have noticed by now that we love Nelson at Future and Celestial use a lot of Rakau so we put the two together which has turned out to be a banging blend! We're getting peach, mango and apricot along with pink grapefruit, lime and Sauv Blanc.
