One Two is a vibrant American Pale Ale that highlights the modern sensory potential of New World ingredients. This hazy pale ale presents an inviting bouquet of lush tropical stonefruit, reminiscent of ripe mango and peach, paired with a bright, sweet citrus undertone. Double dry-hopped with premium NZ hops from Freestyle, the sensory experience is dominated by these fresh, Southern Hemisphere aromatics. A soft, neutral malt base provides a gentle, grainy foundation that supports the intense hop character without competing. Clean fermentation and a moderate bitterness ensure high drinkability, leading to a smooth, fruit-forward finish that highlights the distinctive terroir of the hops.
Appearance. Pale golden (5 SRM) with a moderately large, creamy white head displaying good retention and lacing. The beer exhibits a prominent haze, consistent with its double dry-hopped nature.
Aroma. High intensity hop aroma featuring prominent notes of passion fruit, peach, and apricot. Underlying layers of sweet tangerine and Meyer lemon are present. Malt character is low and neutral, offering a light cracker-like scent. Clean fermentation profile with no discernible diacetyl.
Taste. Initial impression is a burst of tropical fruit—mango and stonefruit—followed by a zesty citrus mid-palate. Malt flavor is supportive but restrained, providing a lean, grainy sweetness. Bitterness is moderate, sufficient to balance the fruitiness without becoming harsh. The finish is medium-dry and clean, with lingering notes of citrus peel.
Mouthfeel. Medium-light body with a soft, slightly creamy texture. Carbonation is moderate to high, providing a refreshing, crisp mouthfeel. No astringency or alcohol warmth is detected, contributing to high drinkability.
