This Weissbier presents a deep golden hue and the characteristic haze of a traditional Hefeweizen, crowned by an exceptionally thick, creamy white head. The high wheat malt content—comprising over 80% of the grist—provides a substantial bready and doughy foundation, while the brewery’s unique top-fermenting yeast drives a vibrant, sparkling bouquet of classic banana esters and subtle clove phenols. On the palate, it balances a soft, grainy sweetness with a refreshing effervescence, leading to a clean, slightly malty finish. Appearance. Dark gold color (approximately 6 SRM) with a slight, persistent haze from suspended yeast and wheat proteins. It is topped by a very thick, moussy, and long-lasting white head with excellent lacing.
Aroma. High intensity with a classic fermentation profile. Prominent esters of ripe banana and spicy clove phenols dominate, supported by a strong bready, doughy wheat malt character. No hop aroma is present, allowing the yeast and malt to remain central.
Taste. The flavor begins with a soft, grainy-sweet maltiness reminiscent of fresh bread. The mid-palate features a well-balanced interplay of banana and clove. Bitterness is very low, providing just enough structure to support the malt. The finish is relatively dry and refreshing, with a subtle, lingering malty character that encourages the next sip.
