This malt backbone supports a vibrant aromatic profile driven by significant dry-hopping with Simcoe and Mosaic. Expect a fusion of classic earthy and floral notes alongside modern layers of resinous pine, grapefruit, and ripe tropical fruit. At 5.6% ABV, it maintains a balanced, medium body with a firm hop bitterness that transitions into a clean, dry finish. Appearance. Deep golden to copper-amber (8–12 SRM); clear with a persistent, creamy off-white head that leaves moderate lacing.
Aroma. Moderate to high intensity featuring piney and citrusy notes from Simcoe and Mosaic, layered over a medium-low bready and biscuity malt character. Low fruity esters and a hint of floral spice are present.
Taste. Initial impression of bready malt followed by assertive hop flavors of pine, berry, and grapefruit. Medium-high bitterness is firm but well-integrated with the English Pale Ale malt base. Finishes medium-dry with a lingering, clean hop character and no harshness.
Mouthfeel. Medium-bodied with a smooth texture; moderate to medium-high carbonation provides a crisp sensation on the palate. Very light alcohol warmth.
