Funky Fluid
Whirl is a vibrant Wild Specialty Beer that reimagines the Sour IPA through a modern, hop-forward lens. A quartet of Superdelic, Citra, Krush, and Riwaka hops unleashes an intense sensory profile of ripe mango, passionfruit, and zesty lime. This tropical explosion is expertly balanced by a sharp, clean acidity that provides a refreshing tartness. The 16.5°Blg gravity contributes to a surprisingly creamy, velvet-like texture that rounds out the palate, softening the bright acidity. Effervescent and bright, it marries the juicy intensity of a New England-style IPA with the revitalizing snap of a wild ale, finishing dry and fruit-heavy.
Appearance. Straw to pale gold (3–6 SRM). Hazy to opaque with a moderate white head. Retention is fair, exhibiting some fine-beaded lacing, though head longevity is slightly diminished by the beer's acidity.
Aroma. High intensity aromatics of guava, passionfruit, and candied orange from Citra and Riwaka. A noticeable lactic tang provides a sharp, clean backdrop. Malt is low and doughy, while wild fermentation contributes very subtle earthy esters and a hint of stone fruit.
Taste. Initial impression is sharply tart and intensely juicy. Explosive tropical fruit flavors from Superdelic and Krush dominate the mid-palate, featuring notes of berry and pineapple. Low hop bitterness is further masked by the clean lactic sourness. The malt provides a soft, bready foundation. The finish is dry, clean, and refreshing with lingering citrus zest.
Mouthfeel. Medium body with a distinctive creamy, smooth texture. Carbonation is moderate-high, providing a lively prickle on the tongue. Alcohol warmth is subtle and well-integrated. No significant astringency despite the high hop load.
