This Triple Wild Specialty Beer presents an indulgent sensory experience inspired by Thai mango sticky rice. Intensely aromatic, it leads with a high-intensity burst of sun-ripened, succulent mango and a rich, nutty layer of toasted coconut flakes. The 7.5% ABV is masterfully integrated into a thick, nectar-like body that balances a vibrant lactic acidity with a substantial residual sweetness. The aroma and flavor are dominated by the tropical fruit and nutty adjuncts, while a subtle hint of wild fermentation adds complexity without overshadowing the fruit. It finishes with a lingering, creamy tropical sweetness that echoes the namesake dessert's luscious character.
Appearance. Deep, opaque orange-yellow (SRM 6-8), reminiscent of thick mango purée. It pours with a dense, pale-yellow head that shows moderate retention and leaves significant lacing due to high fruit solids.
Aroma. High intensity tropical bouquet dominated by fresh, sweet mango and a distinct, buttery, nutty character from toasted coconut flakes. Low malt presence is accompanied by a clean, tangy lactic acidity and very faint, earthy wild yeast esters.
Taste. The initial impression is a massive explosion of sweet mango and creamy coconut. High residual sweetness is offset by a moderate to high lactic sourness, creating a harmonious sweet-and-sour dynamic. Hop bitterness is negligible, allowing the fruit and coconut to lead. The finish is long, sweet, and tropical, with the toasted coconut lingering on the palate alongside a velvety fruit character.
Mouthfeel. Full, viscous, and nectar-like body with a creamy, smoothie-like texture. Carbonation is moderate to low, providing a soft mouth-coating sensation. Noticeable but well-integrated alcohol warmth provides a satisfying weight.
