This Wild Specialty Beer delivers a decadent, smoothie-like experience inspired by Italian gelato. The pour reveals a dense, opaque character, while the aromatics are dominated by a tropical medley of pineapple and lime, softened by the creamy, dessert-like presence of marshmallows and vanilla. On the palate, the ripe sweetness of banana and the delicate floral notes of pear are countered by a refreshing, lactic acidity. The mouthfeel is notably plush and full-bodied, reflecting the high original gravity and the addition of fruit purees. It balances sugary confectionary notes with a bright citrus zest, finishing with a lingering, creamy sweetness that mimics the richness of its namesake dessert.
Appearance. Straw to pale yellow (3-5 SRM). Opaque and dense with significant haze from fruit purees. Large, thick, white head with moderate to good retention and creamy lacing.
Aroma. High intensity. Bold, fresh aromas of pineapple and lime zest lead, followed by a creamy, custard-like scent from banana. Strong secondary notes of marshmallow and sweet vanilla bean. Very low malt character; faint, clean lactic sourness with no hop aroma.
Taste. Initial impression is a burst of tart lime and sweet pineapple. Mid-palate reveals soft pear and rich banana flavors. The sweetness from the marshmallows and vanilla provides a heavy counterpoint to the sharp acidity. Negligible hop bitterness (under 10 IBU). Finish is sweet, fruity, and reminiscent of a melted sorbet.
Mouthfeel. Medium-full to full body with a thick, pulpy texture. Moderate carbonation. Low alcohol warmth. High creaminess with no detectable astringency, feeling luxurious and coating on the tongue.
