This Wild Specialty Beer reimagines the classic Pêche Melba dessert through a vibrant, smoothie-like lens. The sensory experience is dominated by the lush, jammy interplay of ripe raspberries and candied peaches, balanced by a distinct tartness. A generous addition of vanilla provides a creamy, ice-cream-like aroma and flavor that rounds out the acidic fruit profile. Despite the wild fermentation foundation, the 18° Plato gravity ensures a rich, dessert-forward character where the sweetness of the fruit and unfermented sugars creates a luxurious, velvety palate, perfectly capturing the essence of a liquid fruit sorbet.

Appearance. Opaque and viscous, displaying a vibrant coral-to-raspberry-pink hue. It pours with a thick, frothy, light-pink head that exhibits moderate retention and leaves significant fruit-pulp lacing on the glass.

Aroma. High intensity aromatics of fresh raspberry purée and sun-ripened peach. A heavy presence of aromatic vanilla provides a sweet, creamy top note.
