Funky Fluid

This Straight Sour Beer presents a decadent sensory profile inspired by the traditional Czech Frgál cake. A saturated, opaque purple pour leads into an intense aromatic display of tart blackcurrant, jammy blueberries, and fleshy plums. On the palate, a clean and sharp lactic acidity provides a bright counterpoint to the lush, fruit-driven sweetness. The malt base contributes distinct notes of sponge cake and buttery crumble, creating a rich, pastry-like foundation. Despite its sour roots, the experience is defined by its jammy intensity and a thick, velvety texture that mirrors a liquid fruit dessert, finishing with a lingering dark berry sweetness.

Appearance. Deep, opaque burgundy-purple; thick, pink-tinted head with moderate retention; completely hazy and viscous.

Aroma. High intensity; dominant tart blackcurrant and earthy blueberry jam; sweet plum skin; secondary notes of bready sponge cake and vanilla; clean lactic sourness; no hop aroma.

Taste. Initial burst of jammy blueberry and tart blackcurrant; sharp, clean lactic sourness balanced by significant residual fruit sugar; rich plum flavors; bready, biscuity malt character mimicking a dessert crumble; undetectable hop bitterness; lingering, off-dry fruit finish.

Mouthfeel. Full, viscous body; low to moderate carbonation; creamy, smooth texture with a crisp acidic bite; no alcohol warmth.

A Pastry Sour kifejezés leggyakrabban olyan savanyú sörre utal, amelyet szándékosan édesre főznek, és gyakran nem erjeszthető cukrokkal, például dextrózzal és laktózzal készül (ezeket azért nevezik nem erjeszthetőnek, mert az élesztő nem eszi fel őket, és nem alakítja át alkohollá). Ezeket a söröket rengeteg édes összetevő, például gyümölcsök, mályvacukor, keksz, kókuszdió stb. hozzáadásával főzik.
A savanyú sör olyan sör, amelynek szándékosan savanyú, savas vagy fanyar íze van. A hagyományos savanyú sörök közé tartoznak a belga lambic, a gueuze, a flamand vörös sörök, valamint a német gose.
