This vibrant collaboration between Funky Fluid and Spartacus Brewing presents a refreshing take on the tropical Catharina Sour. Gabriel bursts with an intense sensory profile dominated by the punchy, tart essence of fresh passionfruit and the sweet, musky depth of pink guava. As a Wild Specialty Beer, it balances a clean, lactic acidity with a lush fruit character that evokes a sun-drenched Brazilian landscape. The low alcohol content ensures a crisp, accessible experience where the fruit remains the undisputed star, supported by a subtle malt backbone and a bone-dry, effervescent finish that leaves a lingering tropical tang.
Appearance. SRM 3–6; exhibits a hazy, pale straw to light orange color with a distinct pinkish hue from the pink guava. The head is white with a faint pastel tint, showing moderate to low retention typical of high-acidity beers.
Aroma. High intensity aromatics of fresh, sharp passionfruit and ripe, floral pink guava. A clean, lemony lactic sourness provides a bright backdrop. Malt character is neutral and low, while hop aroma is absent, allowing the tropical esters and specialty fruit to dominate the bouquet.
Taste. Initial impression is a sharp, refreshing lactic tartness immediately followed by a wave of tropical fruit flavors. The passionfruit adds a zesty acidity, while the pink guava provides a fleshy, exotic sweetness. It is very low in bitterness with no hop flavor. The finish is very dry and crisp with a lingering fruit-skin tartness.
Mouthfeel. Light-bodied and highly carbonated, providing a spritzy, champagne-like effervescence. There is no perceived alcohol warmth due to the low ABV. A slight, pleasant fruit-derived astringency enhances the dryness without being harsh.
