Florida Vibes: Pinkie is an exuberant Wild Specialty Beer that prioritizes a vibrant, fruit-forward profile. It presents an intense sensory experience driven by a massive addition of raspberries, lychee, and pink guava. The aroma is dominated by jammy red berries and the floral, tropical perfume of the lychee. On the palate, a sharp, clean lactic acidity provides a firm backbone, cutting through the dense fruit presence. Despite the 7.2% ABV and 18°Blg starting gravity, the absence of lactose ensures a crisp, refreshing finish where the earthy sweetness of pink guava lingers. It is a bold, modern interpretation of a fruited sour.
Appearance. Opaque, deep pink to reddish-orange hue with a significant haze from the fruit puree. Pours with a moderate pink-tinted head that dissipates quickly due to high acidity, leaving thin lacing.
Aroma. High intensity aromatics of fresh raspberry jam and tropical pink guava. The lychee adds a distinct floral, grape-like perfume. A clean, sharp lactic sourness is evident, devoid of funk or acetic notes, focusing entirely on the fruit and fermentation acidity.
Taste. Assertively sour from the start. The flavor is a saturated blend of tart raspberries and exotic lychee, followed by the specific tropical musk of pink guava. Very low hop bitterness. The fermentation character is clean, allowing the fruit to shine. Finishes dry and acidic with a long, lingering fruit skin aftertaste.
Mouthfeel. Medium body with a slightly creamy texture from the fruit solids despite the lack of lactose. Moderate to high carbonation provides a prickly sensation that enhances the sourness. No significant alcohol warmth, though a slight weight is present.
