This vibrant Wild Specialty Beer captures the essence of a tropical getaway through a masterfully balanced sour profile. Dominated by the punchy, aromatic intensity of passion fruit and the sharp, citrusy zip of calamansi and lime, it presents a refreshing sensory experience. The wild fermentation provides a subtle lactic tang that cuts through the tropical fruit medley without overshadowing the base beer's crispness. Expect a light, approachable character where the zest of the lime and the exotic floral notes of the passion fruit lead a clean, acidic journey, finishing with a bright, mouth-watering dryness that remains remarkably refreshing regardless of the weather.
Appearance. Pale straw to light gold (3-5 SRM) with a slight hazy luminescence from the fruit additions. Pours with a moderate white head that dissipates fairly quickly, leaving light lacing.
Aroma. High intensity aromatics of fresh passion fruit and zesty lime. Distinctive calamansi notes provide a unique cross between orange and lemon. Low grainy malt sweetness is buried under a moderate lactic sourness and subtle wild funk. No hop aroma is present.
Taste. An immediate burst of tart passion fruit followed by the piercing acidity of lime and calamansi. The malt flavor is very low, providing just enough backbone to support the fruit-forward profile. Bitterness is negligible. Fermentation character is clean-sour with a faint earthy funk. The finish is very dry and crisp with a lingering citrus zest.
Mouthfeel. Light body with high carbonation that enhances the refreshing qualities. No alcohol warmth is perceived at 4% ABV. The feel is crisp and effervescent with a slight puckering astringency from the citrus acids.
